Millet is the most ancient of all cereals. Originally from Central Asia, it is very rich in proteins and carbohydrates and poor in fats. It contains lecithin, than helps to have good memory, and help to keep cholesterol under control. It is the most alkaline cereal and is rich in calcium and magnesium.
It is naturally gluten free, so it is ideal for celiacs. As it is highly digestible it is very well suited for children and pregnant women.
